MAGICK Coffee & Vanilla Cupcakes

Magick coffee is a bit of a wonder. 5 x dual extracted, organic mushroom extracts alongside fair trade, organic coffee - bean of the gods, a legal high, many folks reason to get up in the morning ( especially on a Monday) So here we have a blend of the best functional mushrooms and the bean of the gods in a goddamn cupcake. Heaven sent for sure.

What you need

  • 2 1/2 cups all-purpose flour

  • 4 1/2 tbsp cornflour

  • 3/4 cup coconut sugar or to taste

  • 1 tbsp baking powder

  • 1/2 tsp baking soda

  • pinch of salt

  • 1/4 cup oat mylk

  • 2/3 cup olive oil

  • 1 tsp vanilla

  • 1/2 lemon juice and zest

  • 2 tablespoons or more of Magick Coffee

Marble Cake

Preheat oven to 180 degrees.

Pop some cup cake wrappers into a muffin tray.

In a large bowl, whisk together the flour, cornstarch, coconut sugar, baking powder, baking soda, and salt.

Make a well in the center of the dry ingredients. Add to the well the oat mylk, oil, vanilla extract, lemon juice and zest. Stir together just until combined.

In a second large bowl, add half of the batter. Add a decent couple of tablespoons of Magick Coffee to that batter and mix thoroughly.

Add a spoonful of each batter into each cupcake and kind of mix around. Then add more until all the cupcakes are kinda even.

Bake for 25 mins and eat them all. Yay to mushrooms in a muffin.
