FRY PAN ADAPTOGEN COOKIES

The one big thing about baking that I truly ,truly hate is the dishes.

So when I came across fry pan cookies, I was sold. You literally make the cookie in the frypan and if you are super anti-dishes like me, you can sift the dry ingredients straight into the pan.

No damn dishes!

I made this one with stress busting ashwagandha and rose powder and raspberries but you could add pretty much any MDPP powder and fruit or chocolate or whatever you heart desires into it.

INGREDIENTS

  • 1/3 cup coconut oil

  • 1 cup flour

  • 1/3 cup coconut sugar

  • 1 egg ( you could use a chia egg)

  • 1 teaspoon ashwagandha

  • 1 teaspoon rose powder

  • TOPPINGS

  • Raspberries

  • Grated white chocolate

METHOD

Heat a cast iron pan over a very low heat and add in the coconut oil, then take off the heat and whisk in the egg or egg alternative.

Sift in the dry ingredients then continue to stir with the whisk until it is a dough. Press in the raspberries.

Cook for 10 minutes over a low heat. Cover and cook for a further 5 minutes. Cool for a further 15 minutes with the lid on and then serve!
