THE BEST MUESLI BARS

5 cups of stuff muesli bars

Man, food is getting so expensive. Especially if you have a large household. Thus I have been looking for ways to reduce the cost of my groceries and also to reduce waste. I came across a recipe ( at My Kids Lick the Bowl) for these amazing muesli bars. They are super easy to make, in fact you could get the kids baking them. In addition you can make them with whatever you have hanging around and can change the recipe to account for allergies and likes and dislikes. AND you can add in your favourite potions or mushroom extracts to add some extra whole body support. You are guaranteed to love these!

The bars contain just 5 cups of stuff. Be creative and let me know what your winning combo is!

This makes around 20 bars. They keep for about a week in an airtight container.

  • 1 cup chewy stuff: Quinoa or wheat flakes, rolled oats, coconut threads , ground almonds

  • 1 cup dried fruit: Raisins, sultanas, dates, mango, dried apricots, strawberries,

  • 1 cup crunchy stuff: Rice bubbles, puffed millet, cornflakes, bran flakes, Weetbix, toasted muesli

  • 1 cup Nuts or seeds or a mix of both: Almonds, peanuts, macadamias, walnuts, pistachios, sunflower seeds, pumpkin seeds

  • 1 cup chocolate chips: Can use white, caramel, dark, milk - or if you would prefer without then just add an extra cup of the above.

  • 1/2 cup of almond meal or any kind of flour just to bind

  • 1 can of condensed milk. I use plant based options - coconut or oat.

OPTIONAL - Add two teaspoons of your favourite mushroom extract! Chaga - Deep Energy Replenishment; Cordyceps- Stress and Energy ; Lions mane - Memory & Mood; Reishi - Calm & Stress ; Turkey Tail - Immune & Cellular Health or Shroom Squad- for a little bit of everything

Mix all dry ingredients together and then add the tin of condensed milk and mix thoroughly. Press firmly into a tray lined with baking paper. I use one around 30 x 15cm. Bake at 180 for 20 minutes. Let cool completely in tin and then take out and chop into bars.
