After Dinner Shroom Mints
Maybe its all the rain, maybe its the garden fairies finally beginning to like me, whatever it is, my garden has gone bananas this spring. The king of my garden castle is definitely my old buddy mint.
Mint is so widely used that people forget that it has some amazing benefits. Part of the Lamiaceae family - which also includes many other aromatic culinary herbs such as basil, oregano and rosemary, mint is a bit of a rockstar, especially when it comes to gut stuff. It has a lovely calming, antispasmodic, anti-nausea action so its no wonder that it is used in after dinner mints!
So think of these as some au natural after dinner mints! I have teamed some beautiful big luscious mint leaves here with some dark, dairy free, antioxidant rich chocolate and some of our beautiful gut loving, brain boosting, tonic herb chocolate mint Shroom Brew to make these gorgeous after dinner mint leaves. They would make the perfect post Christmas dinner treat and they look pretty special too!
How to make these babies
Pick some big beautiful mint leaves. Pluck them off the stalks and then pop them in the freezer on some greaseproof paper on a metal tray for five minutes.
In the meantime, melt your chocolate ( I used Whittakers) and stir through three teaspoons of Shroom Brew until well mixed.
Remove the chilled tray and leaves from the freezer and coat completely in the chocolate shroom mix.
Pop them back in the freezer and freeze for an hour or so or overnight.
Take out and serve!
