PINK PITAYA MILLET SLICE
On Thursdays I look after my fiances ex in laws kid. Yes, we have one of those new age families. He isn't any ordinary kid, he is the cutest 8 year old boy that ever graced the planet, god I love that kid. Anyway -tonight we hung out, made pizzas, sang Bohemian Rhapsody and made this slice.
I always want to add in the herbs and make everything super functional but tonight I just added in some pitaya to make it a cute and pink and kid lunchbox worthy.
½ cup cashew, peanut or almond butter
4 cups puffed millet
1/4 cup rice syrup
2 heaped teaspoons MDPP Pitaya Powder
1/2 teaspoon sea salt.
Cup chocolate ( Whittakers is my jam)
Put the nut butter, rice syrup, pitaya and sea salt, into a pot over a low heat. Stir constantly until the mixture begins to melt together.
Remove the pot from the heat and pour in the puffed millet. Mix well.
Press firmly into a pan lined with baking paper.
Refrigerate for 15 minutes or until set and then top with melted chocolate and then slice into bars or fingers.
